There is little exciting to tell about our winemaking facilities because we do as little as possible there. Working gentle and hygienic is nothing special anymore, but doing this without chemicals is. Our grapes and must ferment with ambient yeast only. These are often called “wild” for they appear naturally in our environment and in our vineyards. In organic cultivation one has a particularly high number of various yeasts. One of our greatest aims is to protect the honest and unique natural character of our wines.
