Our Pannonian mixed farming project includes an apple orchard planted with the ‘topaz’ variety. This is particularly suited to our climate. The cool nights in the autumn have a significant influence on the development of the apple’s colour and its bright red skin. Because of its natural resistance to apple scab disease the ‘Topaz’ is particularly suitable for biodynamic cultivation and needs hardly any treatment with sprays. Lush green plants between the trees provide a valuable biotope. Working in accordance with the stellar rhythm and using biodynamic preparations produces balanced and harmonious crops.
Topaz is eminently suitable for storing and requires a number of weeks from the time of harvest before it develops its full spectrum of flavours. Its lively acidity and intense aroma make the apple a secret favourite for many connoisseurs.
